Save for one week of a heatwave, this spring and summer have been a non-starter in London. Yesterday my friend in Aberdeen sent me a video of snow covering the road about ten minutes from her house. The weather is weird and confusing and kind of a downer. BUT. There is a glimmer of hope. My weather app tells me next week is going to sunny and warm all week. Miracle.
Which begs the question, what are you eating/cooking/throwing on a plate this summer?
And herein lies my forever conundrum - I want to eat delicious food, but do not want to spend/do not have the time or fortitude for masses of foodwork. I also don't want to have my oven on for hours and hours when it's sweltering outside; my flat gets unbelievably hot and doesn't cool down much at night. My kid doesn't fuck with salad, so that's out. He won't countenance a sandwich. In fact, his appetite bottoms out when it's hot. Classic.
In the heatwave we had a few weeks back, we ate cheese and crackers and some fruit in the garden (and ice cream, ofc) and this got us through, but that gets old pretty quick.
I figured that maybe some of you might also be trying to solve this particular foodwork-related puzzle? Or maybe you just want some easy summer weeknight recipes? Or maybe, you have this already figured out and can share your wisdom in the comments.
